  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme

Instructions

  1. In a large skillet over medium heat, add olive oil and sliced sausage. Cook for about 4 minutes until browned.
  2. Flip the sausage and cook for another 2 minutes. Add gnocchi, heavy cream, and chicken broth.
  3. Bring to a boil while stirring, then cover and cook for about 5 minutes.
  4. Stir in butternut squash puree and minced garlic; bring back to a boil before reducing heat.
  5. Cook for an additional 3 minutes until the sauce thickens and gnocchi is tender.
  6. Remove from heat and mix in half of the fresh herbs. Serve garnished with remaining herbs.
