  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by combining flour, brown sugar, cinnamon, and salt in a bowl; mix in softened butter until crumbly.
  2. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  3. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt; set aside.
  4. Using a stand mixer, cream cubed butter with both sugars until smooth; add eggs and vanilla extract.
  5. Gradually incorporate the dry ingredients into the wet mixture until fully combined.
