  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • 3 egg yolks
  • Grated coconut
  • Gooey cocoa spread
  • 2 Vegan gelatin sheets (4g)
  • 80g powdered sugar
  • A pinch of sea salt
  • 1/2 sachet baking powder

Instructions

  1. Prepare the Coconut Mousse: Whip heavy cream in a chilled bowl, then mix in mascarpone and powdered sugar. Soak vegan gelatin sheets, heat coconut milk, dissolve gelatin, and fold into whipped mixture.
  2. Assemble Mousse: Fill hemisphere molds halfway with mousse, add cocoa spread, cover with more mousse, and freeze for at least 6 hours.
  3. Make Cocoa Breton Shortbread: Combine ingredients to form dough, chill for 30 minutes, roll out, and cut shapes.
  4. Bake Shortbreads: Preheat oven to 180°C (350°F), bake for about 10 minutes, and cool.
  5. Final Assembly: Unmold frozen domes onto cooled shortbreads and let them thaw before serving with grated coconut on top.
