Chicken Zucchini Bake is a comforting and nutritious dish that combines tender diced chicken, fresh zucchini, and savory mushrooms all baked in a creamy, cheesy filling.

  • 8 ounces boneless chicken
  • 4 ounces fresh mushrooms
  • 1 medium zucchini
  • 2 tablespoons butter
  • 2 cups shredded Italian cheese blend
  • 1/2 cup sour cream
  • 2 green onions
  • 2 large eggs (beaten)
  • Salt and pepper to taste
  • 2 teaspoons dried basil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dice the chicken into bite-sized cubes.
  3. Slice zucchini, mushrooms, and green onions.
  4. In a pan, melt butter over medium heat. Add chicken, zucchini, mushrooms, salt, and pepper; cook until tender (about 5 minutes). Drain excess liquid.
  5. In a mixing bowl, combine cheese, sour cream, green onions, beaten eggs, basil, salt, and pepper.
  6. Mix in the cooked chicken mixture until well coated.
  7. Spray baking dishes with non-stick spray; pour the mixture evenly into dishes.
  8. Bake for 30-35 minutes until golden brown on top.
  9. Let cool for 5 minutes before serving.
