  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 3 tbsp almond-flavored alternative to amaretto
  • 7 oz ladyfinger cookies
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries (pitted and halved)

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form. Add mascarpone, powdered sugar, and vanilla; whip until smooth.
  2. In a shallow dish, combine cooled espresso with the almond-flavored alternative.
  3. Quickly dip ladyfingers into the espresso mixture without soaking them; arrange in a 9×9-inch dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry preserves and fresh cherries.
  5. Repeat layers with remaining ingredients.
  6. Cover and refrigerate for at least six hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with fresh cherries or shaved chocolate.
