Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
  2. Stir in chopped onion and cook for about 3 minutes until softened. Add minced garlic and cook for another minute.
  3. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce. Simmer for 3-4 minutes before removing from heat.
  4. Lay out tortillas; sprinkle cheddar cheese on one half of each tortilla. Spoon beef mixture over the cheese and top with more cheese before folding.
  5. Heat a clean skillet over medium heat; lightly butter or oil the pan. Cook each quesadilla for 2-3 minutes per side until golden brown and crispy.
  6. Let cool slightly before slicing into wedges.
