Ingredients

Scale
  • 1 lb boneless skinless chicken breasts
  • 12 oz bowtie (farfalle) pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Cajun seasoning, for the sauce
  • Fresh chopped parsley, for garnish

Instructions

  1. 1. Cook the bowtie pasta in salted boiling water until al dente (about 10-11 minutes). Reserve some pasta water before draining.
  2. 2. In a large skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun spices and cook until golden brown (8-10 minutes). Remove from skillet.
  3. 3. In the same skillet, sauté minced garlic in butter, then add heavy cream and milk. Stir in Velveeta until melted and smooth.
  4. 4. Mix in mozzarella and Parmesan cheese along with additional Cajun seasoning. Combine with cooked pasta, adjusting consistency with reserved pasta water if needed.
  5. 5. Serve hot, garnished with chopped parsley if desired.
