  • 1 ¾ cups whole milk
  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered Vegan Gelatine
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened (heavy) cream
  • 1 teaspoon vanilla extract
  • pinch of salt
  • ¼ cup white granulated sugar (for toffee)
  • 1 tablespoon water (for toffee)
  • 1 tablespoon pistachios, roughly chopped (for toffee)

Instructions

  1. Infuse 1 cup of whole milk with chai tea bags and spices over medium heat until just boiling. Steep for 10 minutes.
  2. Bloom 3 teaspoons of vegan gelatine in ¾ cup of milk for 5 minutes.
  3. Remove tea bags and spices from the milk mixture, then stir in the dissolved gelatine, sugar, heavy cream, vanilla extract, and salt until smooth.
  4. Pour into serving glasses and refrigerate for at least 4 hours or until set.
  5. For the pistachio toffee topping, cook sugar and water in a saucepan until golden brown, then mix in chopped pistachios before drizzling over chilled panna cotta.
