Ingredients

  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt, to finish
  • Cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved plums cut-side up on a lined baking tray. Drizzle with olive oil and honey if desired.
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Let the plums cool slightly before plating.
  5. Place burrata in the center of a serving plate and surround it with roasted plums.
  6. Top with chopped pistachios and thyme leaves. Drizzle with more olive oil and season with sea salt and black pepper.
  7. Serve immediately, ideally with toasted bread or artisan crackers.
