  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a bowl, mix flour, pumpkin spice, baking soda, and salt; set aside.
  3. In another bowl, combine pumpkin puree, sugars, and eggs. Whisk in vegetable oil and vanilla until smooth.
  4. Gradually stir in dry ingredients until well blended. Fill muffin tins about three-quarters full.
  5. In a separate bowl, beat cream cheese until smooth. Mix in sugar, egg yolk, and vanilla.
  6. Top each muffin with the cream cheese mixture and swirl gently with a toothpick.
