  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened.
  2. Add the ground beef to the skillet, breaking it apart as it cooks until browned. Drain any excess fat.
  3. Stir in the minced garlic and cook for about a minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 18 to 20 minutes until rice is cooked and liquid is absorbed.
  6. While the rice cooks, prepare the cheese sauce in a small saucepan by melting 2 tablespoons of butter over low heat, then stirring in Parmesan, cheddar, and milk until smooth.
  7. Once the rice is done cooking, pour in the cheese sauce and stir until everything is evenly coated.
  8. Cook uncovered for an additional few minutes before serving warm.
