  • 3 pounds beef brisket (cut into 2-inch chunks)
  • 6 ounces turkey bacon (chopped)
  • 3 cups red apple vinegar
  • 23 cups beef stock
  • 1 large carrot (sliced)
  • 1 large white onion (diced)
  • 6 cloves garlic (minced)
  • Fresh thyme and parsley
  • 1 pound mushrooms (quartered)

Instructions

  1. In a Dutch oven over medium heat, add olive oil and cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, brown beef brisket chunks in batches for about 4–5 minutes each side. Remove from pot.
  3. Sauté onion, carrot, and garlic in the same pot until translucent. Sprinkle with flour and stir to coat.
  4. Return bacon and beef to the pot; pour in red apple vinegar and beef stock. Add tomato paste, bouillon cube, thyme, parsley, bay leaves, salt, and pepper. Bring to a simmer.
  5. Cook using your preferred method: slow cooker on low for 8 hours; Instant Pot on high pressure for 35 minutes; stovetop on low heat for about 3 hours.
  6. About 30 minutes before serving, stir in mushrooms and remaining garlic.
  7. Stir in butter before serving for added richness.
