  • 4 large russet potatoes
  • 6 slices thick-cut turkey bacon
  • 1 large yellow onion
  • 3 cloves garlic
  • 2 tablespoons butter
  • 3 ½ cups chicken broth
  • 2 cups half-and-half
  • ¾ cup sour cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove, crumble, and set aside.
  2. In the same pot, melt the butter and sauté chopped onions and minced garlic until softened.
  3. Add peeled and diced potatoes along with salt and pepper.
  4. Sprinkle flour over the mixture, stir well, and cook for about a minute.
  5. Gradually whisk in chicken broth and half-and-half; bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes until potatoes are tender.
  7. For a creamier texture, blend part of the soup before returning to the pot.
  8. Stir in sour cream, crumbled bacon, cheddar cheese, and chives; heat through before serving.
