  • 3 cups butternut squash (peeled, seeded, cubed)
  • 12 oz Brussels sprouts (halved)
  • 8 oz bow tie pasta
  • 5 cloves garlic (minced)
  • 2 tablespoons butter
  • 1/4 teaspoon smoked paprika
  • Fresh thyme (to taste)
  • 12 oz cooked smoked sausage
  • 3 tablespoons olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss butternut squash with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Add halved Brussels sprouts, drizzling with remaining olive oil, salt, and pepper. Roast for 25-30 minutes until golden.
  2. Boil salted water in a large pot. Cook bow tie pasta according to package instructions until al dente. Drain, reserving about 1 cup of pasta water.
  3. In a skillet over medium heat, add remaining olive oil and sliced sausage; cook until browned. Stir in minced garlic for an additional minute.
  4. Combine roasted vegetables and cooked pasta in the skillet with sausage. Mix in butter and reserved pasta water to create a light sauce. Season with smoked paprika, fresh thyme, salt, and pepper to taste.
