  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup all-purpose flour (for crumble topping)
  • ¼ cup packed light brown sugar (for crumble topping)
  • 2 tablespoons granulated sugar (for crumble topping)
  • 1 teaspoon ground cinnamon (optional for crumble topping)
  • 4 tablespoons unsalted butter (melted, for crumble topping)

Instructions

  1. Preheat your oven to 400°F and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Add melted butter and mix until crumbly; set aside.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon for the muffin batter.
  4. In a large bowl, cream together the butter and sugars with an electric mixer until fluffy. Add eggs one at a time along with sour cream and vanilla; blend well.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk; stir until just combined. Fold in diced apples gently.
  6. Fill muffin cups three-quarters full with batter and sprinkle crumble topping generously on each.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Let cool before serving.
