  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter (for topping)
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Add diced butter and whisk until melted.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt until smooth.
  4. Gradually mix the hot cider into the wet ingredients before stirring in the flour until just combined.
  5. Pour into the prepared dish and bake for 22–25 minutes or until golden brown.
  6. Cool briefly on a rack; brush melted butter over the top and sprinkle with cinnamon sugar before serving.
