  • 1 large zucchini (sliced ⅓-inch thick)
  • 2 large eggs
  • 3 tablespoons flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese

Instructions

  1. In a shallow dish, whisk together eggs, flour, salt, and pepper. In another dish, combine panko breadcrumbs and parmesan cheese.
  2. Dip each zucchini slice in the egg mixture, then coat it in the breadcrumb mixture. Place on a baking sheet.
  3. Preheat air fryer to 400°F (200°C). Arrange half of the coated zucchini slices in a single layer in the basket.
  4. Lightly spray with oil and cook for 5-7 minutes. Flip halfway through and spray again; cook until golden brown and crispy (another 5-7 minutes). Repeat with remaining slices.
